Ingredients
- 1 tablespoon butter
- 1 large onion , thinly sliced
- 1 teaspoon finely chopped fresh thyme
- 1 teaspoon balsamic vinegar (optional)
- 1 (6 to 8 ounce) wheel Brie cheese
- 4 slices bacon , cooked and crumbled (see Note)
- 3 tablespoons fig jam
- 1/4 teaspoon freshly ground black pepper
- 1 sheet puff pastry, thawed (from a 17.3 ounce box)
- 1 large egg , beaten
- apple slices and crackers, for serving
Steps
- Melt butter in a skillet over medium heat. Add onions and cook, stirring often, until soft and caramelized, about 30 minutes. Stir in vinegar, and remove from heat. Let cool.
- Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment.
- Slice Brie in half horizontally. Spread 2 tablespoons fig jam on bottom half of Brie. Top with onions, bacon, and remaining jam; season with black pepper. Place top half of Brie back on top.
- Lightly flour a work surface, and roll puff pastry out to a size that will accommodate wrapping the Brie. Place stuffed Brie in center and wrap pastry up and around the sides and top. Transfer pastry, seam side down, to the prepared baking sheet. Brush with beaten egg.
- Bake in the preheated oven until golden brown, about 20 minutes. Transfer to a serving platter and serve with crackers and sliced apples.
